Marc Meneau, inspired by childhood memories and his native Burgundy, is a former pupil of AndrĂ© Guillot at L’Auberge de Marly. He is a self-made man and a voracious reader of the arcane texts of people like Apicius, Taillevent, La Varenne, Bonnefons, La Chapelle, Marin, Isabeau, Viard, CarĂŞme, Brillat-Savarin and countless other gastronomes. He has won widespread renown for the character and generosity of his restaurant, L’EspĂ©rance.
